(CRAB) LOUIE LOUIEI know what your thinking. "A salad recipe? I thought you were a pirate!" Let me explain. The Kingsman (a rock band from the Northwest) recorded Louie Louie in 1963 and it was soon banned as obscene. Even the FBI investigated the song. It's really about a seaman (a pirate perhaps?) who misses his wench. So this is my version of Crab Louis a crab salad also from the American Northwest.
Dungeness Crab Meat At least here, the only way to buy dungeness crab is in the shell. If that's the case where you live don't be intimidated - just pick the meat out. These crabs are pretty big and meaty so they are easy to pick. Be careful to pick all the shells out of the meat. Place a bed of lettuce on a large plate. Add sliced tomatoes, diced avocado, and any of your favorite salad ingredients. Dress the salad with your favorite salad dressing. In the original Crab Louis the dressing is similar to Thousand Island dressing. I prefer to use a Cesar's dressing. Place a big pile of crab meat in the center of the salad. Squeeze a little lemon juice over the salad and serve. A salad even a pirate will love! |
