CRAB CASSEROLEThis dish is very rich and filling.
Take the cheese out of the refrigerator so it will be at room temperature. Melt 3 Tablespoons of butter over medium heat in a saucepan. Stir in flour and cook until well mixed. Pour in milk and cream. Stir until mixture begins to boil. It will thicken. Remove from heat and stir in shredded Swiss cheese, 1/4 cup parmesan cheese, pepper, 1/4 teaspoon Old Bay and a pinch of salt. Continue to stir until all the cheese is melted.
Dump the crab meat into a baking dish. With out breaking apart the lumps of meat pick through it to remove any shells. Pour cheese mixture over the crab and gently stir to mix. Melt remaining butter and stir in bread crumbs and the remaining parmesan cheese. Stir until all the butter is absorbed. Sprinkle crumbs over the crab.
Bake in oven preheated to 400º until the top is nicely browned. Figure on 25 - 30 minutes. Let cool 5 - 10 minutes before serving. Can also be served on crackers as an appetizer.
