GRILLED PORTABELLA MUSHROOM PIZZAThis is just a fun appetizer.
Roast peppers over hot grill turning frequently to blacken all over. Place in zip lock bag and set aside. (Can substitue store bought roasted peppers)
Remove stems and wash mushrooms. Brush them with olive oil. Place on hot grill gill side down; grill for about 5 minutes. While the mushrooms are cooking add any toppings to the grill - use a foil pan if necessary to keep stuff from falling through the grates. Turn mushrooms over on spoon about a teaspoon of garlic on each. Grill for about 3 minutes. Spoon pizza sauce on to each and cover with shredded cheese and optional toppings.
Remove chared skin from the pepers and cut them into 1/4 wide strips. Top each pizza with a few pepper strips - like a pin wheel. Cover and grill for a few more minutes until cheese is melted. Remove from grill, top with chopped basil and serve!
