ROYAL CHICKENThis chicken is so good he has his own throne.
Chicken 4 to 6 lbs
Wash chicken and pat dry. Mix dry seasoning in a small bowl. Season the inside of the bird by sprinkling about a tablespoon of the season mix inside. Gently work your fingers under the skin on the breast and work your fingers under and around the legs and thighs. Once the skin is loose work some seasoning under the skin as far as you can reach. Rub the out side of the chicken with olive oil all over and then rub with the seasoning. If there is any left put it in the half full can of beer.
Set up grill for indirect grilling and add wood chips (hickory or apple) that have been soaking for at least 30 minutes. Fold the wing tips under to protect them from burning. Now the fun part! Lightly oil the beer can. Place peeled lemon in cavity then lift the chicken and gently set it down over the can working the can into the cavity. Place chicken upright in the center of the grill balancing on the can and both legs. Close the lid and cook until done. Usually about an hour depending on the size of the chicken and the temperature of the grill.
Using tongs or oven mitts take the chicken of the grill and stand upright to cool for a few minutes. Remove the can by holding the can and gently lifting the chicken. Careful - the can and contents will be very hot. Let the chicken cool 15 minutes and serve!
