PIRATE GRENADESHow can anything wraped in bacon be a bad thing? These were born out of boredom, hunger and a need to grill something. Toss a few on the grill and relax with a couple beers. These are so easy & so good!
Clean Mushrooms and remove stems. Place a Jalapeno slice on each mushroom and wrap with 1/2 a slice of bacon. You want the bacon to overlap so you can skewer it so if you have larger mushrooms you may need to use about 2/3 of a slice.
Skewer each with a toothpick or thread them on narrow metal or soaked bamboo skewers. This can be done a day ahead of time. Sprinkle with your favorite spice rub (see note below) and brush each with BBQ sauce. If you are using a thick sauce you can thin it with apple juice, bourbon or beer.
Place on the grill with hot, indirect heat turning occationally until the bacon crisps up. About 40 minutes or so. You can also grill over medium direct heat turning more frequently. They will crisp faster, but they will also burn faster! Just watch 'em.
These are great searved with sour cream as a dipping sauce.
Note: For a quick & easy spice rub mix equal parts salt, pepper, garlic powder and brown sugar.
