These little shrimpers will help you win friends and influence people. Deceptively simple - remarkably delicious.

Chili Shrimp with dipping sauce

1 LB Shrimp
2 Cloves Garlic, chopped fine
4 TablespoonsButter
2 Teaspoons Brown Sugar
2+ Tablespoons Chili Oil

Melt butter in a large skillet over medium high heat. Stir in garlic. Continue to stir as garlic cooks. After about 2 - 3 minutes stir in brown sugar and chili oil. Turn heat down to medium and add shrimp in a single layer. If you have more shrimp make 2 batches.

After about 3 minutes the shrimp should be the wonderful pink color we all look for. Flip the shrimps and do the other side. Be careful not to over cook. They should be white all the way through and crisp - not chewy. (It is perfectlyt acceptable to have a few extra shrimp in the pan to serve as "doneness testers" for the cook.

Reserve the pan drippings for bread dipping!

For a nice cool dipping sauce for the shrimpers mix:

1/2 Cup Sour Cream
Zest from one lemon
1/2 Teaspoon Lemon Juice

Just stir it together and refridgerate until ready to use. Best if made the day before.
