WHAT'S A FATTIE?Never tried a fattie? A fattie is a breakfast sausage smoked whole. If you like sausage then you're gonna love these.
This is about as simple as it gets. Pull your sausage out and remove the wrapper leaving the sausage whole. Sprinkle with your favorite BBQ rub. Toss on the smoker at about 225° for 2 hours or so. Your looking for an internal temperature of 160°.
Now for the fun stuff! You can also pirate this up by adding optional ingreadiants. I like to add cheese and spring onions. Roll your sausage out or use a knife and open it up like a jelly roll. Spead a few tablespoons of spring onions and lay in a few thick strips of cheese. Roll it back up and be sure to seal the ends so the cheese doesn't seep out.
But you don't need to stop there the possibilities are endless. In addition to the cheese and spring onions toss in some sliced jalapenos, crumble in some crisp bacon and roll it up. Be sure to pinch the ends closed. Wrap the outside with raw bacon and sprinkle with your rub. Cook as above.
Let them rest a bit after they come off your cooker then slice and serve. These also freeze very well so why not cook up a few at a time and freeze some for later?
